Installation mode is just that installation,  a minimal system is installed in 
RAM to accomplish installation.  Booting rescue mode, same idea a minimal 
system to fix a system that won't boot.  Rescue is not meant to be a 
replacement installation.  LVM partitioning can be done as part of the 
installation.  You probably have to select custom disk partitioning to get to 
it. If you want to experience working with LVM from command line you may want 
to install a second disk after installation and deal with it manually.
