I was hoping for some simple command line query. I had already asked on irc://freenode/fedora where I was pointed to fontconfig in the first place, after which I looked at that file without finding anything I recognized as remotely resembling a clear answer. I let myself be lead astray trying to get help from http://mrmazda.no-ip.com/auth/Font/font-helvetica.html in Firefox, having forgotten to switch its default back to the generic sans-serif first, so in frustration I asked here. Since then I've found that Helvetica does alias to Nimbus Sans L, while the generic sans-serif does default to Luxi Sans.
