I have had no problem changing the default editor in recent Fedora
Cores:

* Browse to a directory containing source files using Nautilus
* Right click on a source file and choose properties
* Go to the open with tab and choose away

I did mention in my post that I had tried following the help
and the interactive links (which you just described) which
claim to be able to do that, and which fail.
