I tend to use Postfix these days. Sendmail is also included and I
believe the default. Both are solid programs. Asking this list which is
easiest is more likely to produce a religious war than provide a clear
choice.

I recommend avoiding them.

Viruses are primarily Windows targeted. Clamav and if you choose
Sendmail as your MTA you can also use clamav-milter

Spam - spamassassin and if you choose Sendmail as your MTA, you can also
use spamass-milter

I very much like Mailscanner as the master to invoke the virus/spam
scanning. It's probably most helpful to use something like MailScanner
or amavis-new or mime-defang as the master mail filter manager.
