If you don't need tape copies, I recommend backuppc:
http://backuppc.sourceforge.net/
It uses a clever scheme of compression and linking that will store
about 8x what you'd expect, keeping it online with a nice web
interface to browse and restore.

If you use amanda, the version included in fedora should be fine.

Neither of these will do bare-metal restores of windows clients, but
can save data files via samba  - and with backuppc you have the option
of using rsync.
