Is this intentional, or is it a bug? What's the best way to uninstall
everything I don't need?
I don't think this is a bug as I've done it numerous times. However, there is a possibility that you're selecting a particular application which depends on X, and the installer, upon checking dependencies, will then install it for you, despite you not picking it.

Personally I think it would be nice if the installer had a 'noX' option for those of us who don't need X on their machines.
