SASL setup has nothing to do with Postfix's virtual user setup or
mappings.

You should read Postfix's VIRTUAL_README (part of the package
or online at http://www.postfix.org/VIRTUAL_README.html) and ensure
you're able to deliver local and virtual users and aliases with "local"
before attempting to plug cyrus-imap into the mix.
