from the fdisk output it seems that you dont use LVM

And second one: I updated my system, all the software and downloading
all the stuff took hours to me. Is there a possibility to backup the
updates and use them again if I have to reinstall the whole system?

If you use yum, the packages are stored under /var/cache/yum/ <repo name>. if you use up2date, packages are removed after installation by default. otherwise it gets stored in /var/spool/up2date
