Now when I boot up, it drops me to the grub prompt. If I type configfile /boot/grub/grub.conf, then I can
boot. How do I get GRUB to just stick with the same
grub.conf file?

Probably, it is looking for menu.lst. grub.conf is a Red Hat insanity which it seems to have abandoned, perhaps in the interests of being more standard.
