Just change the first one:
> title Fedora Core (2.6.10-1.14_FC2)
> 	root (hd0,0)
> 	kernel /vmlinuz-2.6.10-1.14_FC2 ro root=LABEL=/ rhgb quiet psmouse.proto=bare
> 	initrd /initrd-2.6.10-1.14_FC2.img

That should do it for the latest kernel, without touching the earlier
kernel.

This should be trouble-free and Just Work, but as a matter of Normal
Healthy Paranoia, you should be slightly nervous about playing with the
boot sequence on any computer, since getting it wrong could stop the
computer from booting.

Only slightly nervous, though.
