switchdesk KDE (for example)
creates .Xclients and .Xclients-defaults files in your home directory, which are read by X when you log in

Or to change the system default desktop, edit /etc/sysconfig/desktop and change:

DESKTOP="GNOME"
to
DESKTOP="KDE"
