For me, Shorewall is the concensus. :-)

Just download the latest RPM, read the "Two-Interface QuickStart Guide" and you're up and running in 15 minutes. Shorewall will make it easy to do simple stuff, and is also able to do complex stuff. Does not require X, or a GUI, and is remotely accessible and configurable via SSH. Very actively supported as well.
