some really typical options are

-g XxY

(where X is horizontal screen pixels and Y is vertical screen pixels, eg 1024x768); and

-f

for full-screen (or hit ctrl-alt-enter to toggle). So a pretty common command looks like

rdesktop -g 1024x768 -f 192.168.2.1

(where the last bit is the IP address of the server you're connecting to).
