2) Trying to write some files to the DVD it tells me "A CD-R/RW is
required in the CD-Writer before a session can be mastered.  Please
insert a CD-R/RW and try again".  Does this mean it is still only able
to do minus (-) media?

It happens on my system with CD burner also. Just try the "continue
anyway" button. Worked for me.
